However, this does not affect ChatGPT Enterprise or ChatGPT Edu customers, nor users with Zero Data Retention agreements. OpenAI expressed concerns about complying with the EU’s GDPR, which grants a “right to be forgotten,” stating they are taking steps to comply with the law.

Jun 5 OpenAI lists abuse monitoring logs as the only logs they have that store completions. they also say that “Zero Data Retention excludes customer content from abuse monitoring logs.”
are you saying there is a another source of logs (security logs?) that retain prompts+completions
